Veal rolls with Fayrouz Pomegranate and pines
½ kilo veal strips
2 tbs pine nuts
½ kilo peeled, seeded and diced tomatoes
2 cloves garlic, crushed
1 tsp garlic powder
½ cup pomegranate seeds
Bunch of fresh parsley, shredded
2 chicken cubes
½ cup Fayrouz Pomegranate
1 cup water
Beat meat strips till flat
Fry pine nuts, parsley, crushed garlic in a bit of oil on medium heat till golden
Put one tsp of pine mix on the side of each meat strip. Roll meat and secure with a toothpick.
Tomato Salsa: Boil tomatoes with garlic powder, chicken stock, Fayrouz Pomegranate, water and salt on medium heat till it thickens. Remove from heat
Stir fry meat rolls in oil for 10-15 minutes on all sides
Arrange meat rolls in oven dish and cover with tomato salsa. Cook in medium hot oven for 30 minutes.
To serve: Remove toothpicks from meat rolls. Garnish with lettuce and pomegranate seeds. Serve hot with white rice.
